Baker’s Numbers (more commonly known as Baker’s Percentages or Baker’s Math) is a standardized notation system used in baking to express recipes as ratios relative to the total weight of the flour.
Instead of measuring ingredients using absolute units or standard percentages (where all components add up to 100%), Baker's Math assigns flour a fixed value of 100%. Every other ingredient is then calculated as a percentage of that total flour weight.
